  • 4 boneless chicken thighs (about 1 lb)
  • 6 oz quality Spanish chorizo, sliced
  • 2 bell peppers (red and yellow), chopped
  • 1 large red onion, cut into wedges
  • 3 garlic cloves, minced
  • 2 tsp dried oregano
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 400°F (200°C). Prepare a large baking tray.
  2. In a mixing bowl, combine chicken thighs and sliced chorizo with olive oil, salt, pepper, oregano, and garlic. Toss well to coat.
  3. Add bell peppers and red onion to the mixture and toss again.
