  • 1 cup corn
  • 1 cup bell peppers, diced
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream or Greek yogurt
  • ½ cup salsa (mild or spicy)
  • 2 tsp olive oil
  • 2 tsp cumin
  • 2 tsp chili powder
  • 2 tsp garlic powder
  • Salt to taste

Instructions

  1. Marinate chicken in olive oil and seasonings for at least 30 minutes.
  2. Cook marinated chicken in a skillet over medium heat for about 6-7 minutes per side until golden brown and fully cooked.
  3. Prepare rice according to package instructions and warm black beans in a small pot.
