- 4–6 lbs Prime Rib Roast
- 2 tbsp Kosher Salt
- 1 tbsp Freshly Ground Black Pepper
- 4 Garlic Cloves, crushed
- 2 tbsp Fresh Rosemary, chopped
- 2 tbsp Fresh Thyme, chopped
- 3 tbsp Olive Oil
- 1 cup Beef Broth or Red Wine
Instructions
- Allow the prime rib to sit at room temperature for 1 hour before cooking.
- Preheat the oven to 450°F (232°C). Rub the roast with olive oil and season generously with salt, pepper, garlic, rosemary, and thyme.
- Place the roast bone-side down in a roasting pan and sear for 20 minutes until browned.
- Reduce oven temperature to 325°F (163°C) and roast until an internal thermometer reads 130°F (54°C) for medium-rare (approximately 1.5 to 2 hours).
- Tent with foil and let rest for 20-30 minutes before carving.
- For jus, pour off excess fat from the pan, add beef broth or wine, deglaze over medium heat until slightly thickened.
- Slice against the grain and serve with jus.
