  • 4 cloves fresh garlic, minced
  • 1 cup cranberry sauce (homemade or store-bought)
  • 2 tbsp honey
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp fresh rosemary or thyme (or ½ tsp dried)

Instructions

  1. Preheat oven to 375°F (190°C). Season chicken breasts generously with salt and pepper.
  2. In a large oven-safe skillet, heat olive oil over medium-high heat. Sear chicken for 3-4 minutes on each side until golden brown.
  3. Add minced garlic to the skillet after flipping the chicken. Sauté until fragrant, about 30 seconds.
  4. In a bowl, mix cranberry sauce and honey until smooth. Pour over the chicken in the skillet.
  5. Transfer the skillet to the oven and bake for 20-25 minutes until the internal temperature reaches 165°F (74°C).
  6. Remove from oven, let rest for 5 minutes, garnish with fresh herbs, and serve.
