  • 2 cans (15 oz each) canned sweet corn, drained
  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese, divided
  • 4 tbsp unsalted butter
  • 2 tbsp granulated sugar
  • 2 large eggs, beaten
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Optional: 1/2 cup breadcrumbs for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium saucepan over low heat, melt the butter until bubbly.
  3. In a large bowl, combine melted butter, softened cream cheese, and sugar until smooth. Gradually whisk in beaten eggs.
  4. Fold in the drained sweet corn and half of the shredded cheddar cheese until well mixed.
  5. Season with salt and pepper to taste.
  6. Pour the mixture into a greased baking dish and top with remaining cheddar cheese (and optional breadcrumbs).
  7. Bake for 45-50 minutes or until golden brown and bubbly.
