- 2 cans (15 oz each) canned sweet corn, drained
- 8 oz cream cheese, softened
- 1 cup shredded sharp cheddar cheese, divided
- 4 tbsp unsalted butter
- 2 tbsp granulated sugar
- 2 large eggs, beaten
- 1 tsp salt
- 1/2 tsp black pepper
- Optional: 1/2 cup breadcrumbs for topping
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium saucepan over low heat, melt the butter until bubbly.
- In a large bowl, combine melted butter, softened cream cheese, and sugar until smooth. Gradually whisk in beaten eggs.
- Fold in the drained sweet corn and half of the shredded cheddar cheese until well mixed.
- Season with salt and pepper to taste.
