  • 4 boneless, skinless chicken breasts (about 600g)
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream (240ml)
  • 1 cup low-sodium chicken broth (240ml)
  • 2 tbsp butter (28g)
  • 2 tbsp olive oil (30ml)
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1 lb Yukon Gold potatoes (450g), peeled and cubed
  • 1/4 cup milk or cream for mash (60ml)

Instructions

  1. Prepare all ingredients by chopping garlic and parsley and peeling the potatoes.
  2. In a skillet over medium-high heat, combine olive oil and butter. Sear seasoned chicken breasts for about 6–7 minutes on each side until golden brown.
  3. Remove chicken temporarily; sauté minced garlic in remaining oil for about 30 seconds.
  4. Add chicken broth to the pan, scraping up bits stuck to the bottom. Stir in heavy cream and bring to a gentle simmer.
  5. Return cooked chicken to the skillet and let it simmer for an additional 5 minutes.
  6. Boil peeled potatoes in salted water until fork-tender (around 15 minutes). Drain well and mash with butter and milk until smooth.
