  • 1 pound large fresh shrimp, peeled and deveined
  • 1 cup panko breadcrumbs
  • 3 green onions, finely chopped
  • 3 garlic cloves, minced
  • 1 large egg, room temperature
  • ½ cup sweet chili sauce
  • 2 tablespoons sriracha sauce
  • 2 tablespoons freshly squeezed lime juice

Instructions

  1. Chop the shrimp into fine pieces for even texture.
  2. In a bowl, mix chopped shrimp, garlic, green onions, panko breadcrumbs, and egg until sticky.
  3. With wet hands, form mixture into golf ball-sized balls.
  4. Heat oil in a skillet over medium heat and fry shrimp balls for 3-4 minutes on each side until golden brown.
  5. In a small bowl, combine sweet chili sauce, sriracha, and lime juice for dipping.
  6. Serve warm with the sauce on the side.
