  • 4 large russet potatoes, diced
  • 6 slices thick-cut bacon, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese (plus more for topping)
  • 1/2 cup sour cream
  • 2 green onions, chopped (for garnish)

Instructions

  1. Prepare the russet potatoes by washing and dicing them into bite-sized cubes. Set aside.
  2. In a skillet over medium heat, cook the chopped bacon until crispy. Add the diced onion and minced garlic; sauté until translucent.
  3. Transfer the bacon mixture to the Crock Pot along with the diced potatoes and chicken broth. Stir in cream cheese cubes.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until potatoes are tender.
  5. Once cooked, use a potato masher to slightly mash some of the potatoes for a creamy texture. Stir in shredded cheddar cheese and sour cream until melted.
  6. Garnish with chopped green onions and extra cheese before serving.
