  • 4 large russet potatoes, peeled and thinly sliced
  • 1 cup heavy cream
  • 1 ½ cups sharp cheddar cheese, grated
  • 4 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • Salt and pepper to taste
  • ½ teaspoon paprika

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and slice the potatoes into uniform 1/8 inch thick slices.
  3. In a skillet over medium heat, melt butter and sauté diced onions until translucent (about 5 minutes).
  4. In a bowl, mix heavy cream with salt, pepper, and half of the grated cheese.
  5. In a greased baking dish, layer half the potatoes, sautéed onions, and half the cream mixture. Repeat layers.
  6. Cover with foil and bake for 45 minutes. Remove foil, sprinkle remaining cheese on top, and bake uncovered for another 15 minutes until golden brown.
