Ingredients

  • 2 cups ripe dragon fruit pulp (about 1 large dragon fruit)
  • 1/2 cup granulated sugar (adjust to taste)
  • 2 tbsp freshly squeezed lemon juice
  • 1/2 cup water

Instructions

  1. Slice the dragon fruit in half and scoop out the flesh into a blender to obtain about two cups of pulp.
  2. Add granulated sugar and lemon juice to the blender, then blend until smooth.
  3. In a small saucepan, combine water and remaining sugar over medium heat. Stir until sugar dissolves completely (3-5 minutes). Let cool.
  4. Pour cooled sugar-water into the blender with the dragon fruit puree and blend briefly to combine.
  5. Transfer mixture into a shallow container, spread evenly, and freeze for at least four hours until firm.
  6. Before serving, let sit at room temperature for 5 minutes, scoop, and enjoy!
