  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 2 tsp ground cinnamon
  • ½ tsp salt
  • 1 cup whole milk (or almond/oat milk)
  • 2 large eggs
  • ½ cup melted butter
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix flour, sugar, baking powder, cinnamon, and salt until combined.
  3. In another bowl, whisk together milk, melted butter, vanilla extract, and eggs until smooth.
  4. Gradually pour wet ingredients into dry ingredients and stir gently until just combined.
  5. In a small bowl, mix ¼ cup sugar with 2 tsp cinnamon for the topping.
  6. Pour half of the batter into the loaf pan, sprinkle half of the cinnamon-sugar mixture on top, add remaining batter, and top with the rest of the mixture.
  7. Bake for 45-50 minutes until golden brown; check with a toothpick for doneness.
  8. Allow to cool slightly before slicing.
