  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • Cinnamon sugar mixture: 2 tbsp granulated sugar + 2 tsp ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8 inch baking pan or line with parchment paper.
  2. In a mixing bowl, cream together the butter, brown sugar, and granulated sugar until fluffy (about 2-3 minutes).
  3. Beat in eggs one at a time, followed by vanilla extract until smooth.
  4. In another bowl, sift together flour, baking powder, salt, and cinnamon. Gradually mix into the wet ingredients until just combined.
  5. Pour batter into prepared pan and sprinkle generously with the cinnamon sugar mixture.
  6. Bake for 20-25 minutes or until edges are golden brown; the center should remain slightly soft.
  7. Allow to cool before cutting into squares.
