Instructions
- Peel and chop the Yukon Gold potatoes into uniform chunks.
- Boil the potato chunks in salted cold water for 15-20 minutes until fork-tender.
- Wrap garlic cloves in foil with olive oil; roast at 400°F (200°C) for about 20 minutes.
- Drain the potatoes and return them to the pot over low heat to evaporate excess moisture.
