  • 2 lbs Yukon Gold potatoes, peeled and chopped
  • 4 cloves fresh garlic
  • 1/2 cup unsalted butter
  • 1/2 cup heavy cream (or half-and-half)
  • Salt and pepper to taste
  • 2 tbsp fresh chives (optional)

Instructions

  1. Peel and chop the Yukon Gold potatoes into uniform chunks.
  2. Boil the potato chunks in salted cold water for 15-20 minutes until fork-tender.
  3. Wrap garlic cloves in foil with olive oil; roast at 400°F (200°C) for about 20 minutes.
  4. Drain the potatoes and return them to the pot over low heat to evaporate excess moisture.
  5. Add butter and gradually mix in heavy cream until creamy.
  6. Mash until smooth, then season with salt and pepper. Top with chives if desired.
