  • 4 lbs pork shoulder
  • 2 tsp salt
  • 1 tsp black pepper
  • 8 whole garlic cloves
  • 2 medium sweet onions, sliced
  • 2 tsp dried thyme
  • 1 tsp caraway seeds
  • 1 cup beef or chicken broth
  • 2 cups chopped carrots
  • 2 cups chopped potatoes

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Rub the pork shoulder generously with salt and pepper.
  3. Place garlic cloves and onion slices around the pork in a roasting pan. Sprinkle thyme and caraway seeds on top.
  4. Pour broth into the pan and add chopped carrots and potatoes.
  5. Cover the pan with aluminum foil and roast for about 3 hours or until fork-tender.
  6. Remove the foil during the last 30 minutes to develop a crispy crust.
