  • 2 ripe peaches (halved and pitted)
  • 8 oz burrata cheese (torn into pieces)
  • 4 cups fresh arugula
  • 2 tbsp extra virgin olive oil (divided)
  • 2 tbsp balsamic glaze (plus extra for drizzling)
  • ¼ cup toasted pine nuts

Instructions

  1. Preheat your grill to medium-high heat (400°F/200°C).
  2. Brush peach halves lightly with 1 tablespoon of olive oil.
  3. Grill peaches cut-side down for about 3-4 minutes until grill marks appear.
  4. In a large bowl, toss arugula with remaining olive oil and balsamic glaze until coated.
  5. Arrange torn burrata over the arugula and place grilled peaches around it.
  6. Sprinkle toasted pine nuts on top and drizzle with additional balsamic glaze before serving.
