  • 2 medium zucchinis (sliced into half-moons)
  • 1 tablespoon sesame oil
  • 2 tablespoons low-sodium soy sauce
  • 3 cloves garlic (minced)
  • ¼ teaspoon black pepper
  • 2 green onions (chopped)

Instructions

  1. Wash and dry the zucchinis. Cut off the ends and slice them into half-moons about half an inch thick.
  2. Preheat a skillet over medium-high heat. Add sesame oil until it shimmers.
  3. Sauté minced garlic for about 30 seconds until fragrant, then add zucchini slices.
  4. Stir-fry for 5-7 minutes until the zucchini is tender-crisp and slightly charred.
  5. Add soy sauce and black pepper, stirring for another minute to coat the zucchini evenly.
  6. Toss in chopped green onions just before serving, then remove from heat.
