  • 1 cup cherry tomatoes, halved
  • 8 oz fresh burrata cheese
  • 2 tbsp olive oil (plus extra for drizzling)
  • 1 tsp salt
  • 1/2 tsp freshly cracked black pepper
  • 3 garlic cloves, minced
  • Juice of 1 lemon
  • 1/4 cup fresh basil leaves, torn

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry and season both sides with salt, pepper, and minced garlic.
  3. Heat olive oil in a large skillet over medium-high heat. Cook the chicken cutlets until golden brown on both sides (about 5-6 minutes per side).
  4. Scatter halved cherry tomatoes around the chicken in the skillet. Drizzle with olive oil and lemon juice, then transfer the skillet to the preheated oven.
  5. Bake for about 10 minutes, then place slices of burrata on top of each cutlet. Bake for an additional 5 minutes until bubbly.
  6. Remove from the oven and garnish with fresh basil before serving.
