  • 1 cup fermented kimchi
  • 1 lb pork belly or beef brisket, cubed
  • 1 cup firm tofu, cubed
  • 1 cup napa cabbage, chopped
  • 1 cup Korean radish, sliced
  • 4 cups water or broth
  • 2 tbsp gochujang (Korean chili paste)
  • 3 cloves garlic, minced
  • 2 green onions, chopped
  • 1 tbsp sesame oil

Instructions

  1. Gather all ingredients for a smooth cooking process.
  2. In a large pot over medium heat, sauté minced garlic in oil until fragrant (about 30 seconds).
  3. Add cubed pork belly or beef brisket and cook until browned.
  4. Mix in the kimchi and let it cook for about five minutes to meld flavors.
  5. Pour in water or broth to cover the ingredients and bring to a boil; then reduce heat and simmer for 30 minutes.
  6. Gently add tofu cubes, napa cabbage, and radish; cook until veggies soften (10-15 minutes).
