  • 2 lbs lamb shoulder, cut into chunks
  • 2 medium yellow onions, diced
  • 4 cloves garlic, minced
  • 1 can (28 oz) whole peeled tomatoes
  • 1 cup red wine
  • 2 tsp fresh thyme, chopped
  • 2 tsp fresh rosemary, chopped
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by dicing the onions and mincing the garlic.
  2. In a large pot, heat olive oil over medium-high heat. Sear lamb chunks until browned (5-7 minutes).
  3. Add onions and garlic; sauté until fragrant (3-4 minutes).
  4. Deglaze with red wine, scraping up brown bits from the bottom.
  5. Stir in crushed tomatoes, thyme, and rosemary; bring to a simmer.
  6. Cover tightly and let cook on low heat for 2-3 hours until lamb is fork-tender.
  7. Shred the lamb with two forks and return to the sauce. Serve over pasta or polenta.
