  • 1 cup whole milk
  • 2 tablespoons culinary-grade lavender buds
  • ½ cup raw honey
  • ½ cup granulated sugar
  • 4 large egg yolks

Instructions

  1. In a medium saucepan, combine heavy cream and whole milk over low heat; add lavender buds and steep for about 10 minutes until fragrant.
  2. Strain the mixture through a fine mesh sieve to remove lavender buds.
  3. In a bowl, whisk together egg yolks and granulated sugar until pale. Gradually add the strained milk mixture, whisking continuously.
  4. Return the mixture to the saucepan and cook over medium-low heat until thickened (5-7 minutes).
  5. Remove from heat, stir in honey until dissolved, then chill in the refrigerator (at least 4 hours or overnight).
  6. Pour into an ice cream maker and churn according to instructions until soft-serve consistency (20-25 minutes).
  7. Transfer to an airtight container and freeze for at least 4 hours until firm.
