Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

  3. In another bowl, cream softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in lemon zest and juice.
  4. Gradually mix in dry ingredients alternating with milk until just combined.
  5. Pour the batter into prepared pans and bake for 25-30 minutes until golden brown.
  6. Cool cakes in pans for about 10 minutes before transferring to wire racks to cool completely.
  7. For frosting, mix powdered sugar with softened butter, then add lemon juice and vanilla extract to reach desired consistency.
  8. Frost the top of one layer, stack the second layer on top, and frost the sides.
