  • 1 batch pie crusts (store-bought or homemade)
  • 1 cup chopped pecans
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (light)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup melted butter

Instructions

  1. Preheat your oven to 350°F (175°C). Roll out pie crusts and cut circles to fit muffin tins.
  2. Press each circle into the muffin cups snugly.
  3. In a bowl, whisk together granulated sugar, brown sugar, eggs, melted butter, vanilla extract, and salt until smooth.
  4. Stir in chopped pecans until coated.
  5. Fill each crust with the pecan mixture until just below the top.
  6. Bake for 20-25 minutes or until edges are golden brown and filling is set but jiggles slightly.
  7. Allow to cool before removing from tins.
