  • 1 store-bought pie crust
  • 4 large eggs
  • 1 cup whole milk or heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup diced vegetables (e.g., spinach, bell peppers, onions)
  • 1 cup cooked ham or bacon (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a muffin tin.
  2. Roll out the pie crust on a floured surface and cut circles to fit muffin cups.
  3. Sauté diced vegetables in olive oil over medium heat until softened, about 5 minutes. If using meat, add it at the end just to warm through.
  4. In a bowl, whisk together eggs, milk or cream, salt, and pepper until fluffy.
  5. Place the pie crust in each muffin tin; fill with sautéed veggies/meat and pour in the egg mixture until just full.
  6. Bake for 20-25 minutes until golden brown. Serve warm.
