- 4 large eggs
- 1 cup whole milk or heavy cream
- 1 cup shredded cheddar cheese

Instructions
- Preheat oven to 375°F (190°C) and grease a muffin tin.
- Roll out the pie crust on a floured surface and cut circles to fit muffin cups.
- Sauté diced vegetables in olive oil over medium heat until softened, about 5 minutes. If using meat, add it at the end just to warm through.
- In a bowl, whisk together eggs, milk or cream, salt, and pepper until fluffy.
- Place the pie crust in each muffin tin; fill with sautéed veggies/meat and pour in the egg mixture until just full.
- Bake for 20-25 minutes until golden brown. Serve warm.
