Description

Mushroom and Spinach Lasagna Roll Ups are a delightful twist on classic lasagna, combining tender noodles with a savory filling of sautéed mushrooms and fresh spinach.   • 9 lasagna noodles
  • 2 cups fresh spinach, chopped
  • 1 cup cremini mushrooms, sliced
  • 1 cup ricotta cheese
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Boil salted water in a large pot and cook lasagna noodles until al dente. Drain and lay flat.
  2. In a skillet, heat olive oil over medium heat. Sauté garlic until fragrant, then add mushrooms and spinach; cook until tender.
  3. In a bowl, mix ricotta, sautéed vegetables, salt, pepper, and half the Parmesan cheese.
  4. Spread marinara sauce on each noodle, place filling at one end, and roll tightly. Arrange in a greased baking dish seam-side down.
  5. Top with remaining marinara sauce and sprinkle mozzarella and Parmesan cheese. Bake for about 30 minutes until bubbly.
