- 9 lasagna noodles
- 2 cups fresh spinach, chopped
- 1 cup cremini mushrooms, sliced
- 1 cup ricotta cheese
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Boil salted water in a large pot and cook lasagna noodles until al dente. Drain and lay flat.
- In a skillet, heat olive oil over medium heat. Sauté garlic until fragrant, then add mushrooms and spinach; cook until tender.
- In a bowl, mix ricotta, sautéed vegetables, salt, pepper, and half the Parmesan cheese.
- Spread marinara sauce on each noodle, place filling at one end, and roll tightly. Arrange in a greased baking dish seam-side down.
- Top with remaining marinara sauce and sprinkle mozzarella and Parmesan cheese. Bake for about 30 minutes until bubbly.
