  • 8 oz fresh cremini and shiitake mushrooms (sliced)
  • 1 small onion (finely diced)
  • 2 cloves garlic (minced)
  • 2 tbsp fresh thyme or parsley (chopped)
  • 4 oz cream cheese or Gruyère (softened)
  • 1 egg (beaten, for egg wash)
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté onions until translucent, then add garlic and mushrooms. Cook until softened.
  2. Stir in herbs, salt, pepper, and cream cheese until well combined.
  3. Roll out puff pastry on a floured surface to about 1/4 inch thick.
  4. Spread mushroom mixture evenly on the pastry and roll tightly into a log.
  5. Slice into 1-inch pinwheels and place on a parchment-lined baking sheet. Brush with beaten egg.
  6. Preheat oven to 400°F (200°C) and bake for 15-20 minutes or until golden brown.
