  • 1 cup fresh ricotta cheese
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 3 garlic cloves, minced
  • 2 cups fresh spinach leaves
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Prep your ingredients: Chop garlic, zest lemons, and measure out your pasta.
  2. 2. Cook the pasta: In a large pot, bring salted water to a boil. Add rigatoni and cook until al dente (about 10 minutes).
  3. 3. Sauté garlic & spinach: Drain pasta, reserving 1 cup of cooking water. In the same pot, heat olive oil over medium heat, add garlic and sauté until fragrant. Toss in spinach until just wilted.
  4. 4. Create the sauce: Stir in ricotta cheese, lemon zest, and juice along with reserved pasta water until desired creaminess is reached.
