  • 1 cup basmati rice
  • 1/2 cup dried apricots, chopped
  • 1/2 cup shelled pistachios
  • 1 medium onion, finely chopped
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • 2 cups chicken or vegetable broth
  • Fresh parsley for garnish

Instructions

  1. Rinse the basmati rice under cold water until clear, then soak for 30 minutes.
  2. In a large pot over medium heat, warm olive oil and sauté onions until translucent (about 5 minutes).
  3. Drain the soaked rice and add to the pot with onions; stir gently to coat.
  4. Add cumin, cinnamon, and cardamom; toast spices for 1 minute.
  5. Pour in the broth and bring to a boil; reduce heat to low, cover, and simmer for 15-20 minutes until liquid is absorbed.
  6. Fluff the rice with a fork and fold in dried apricots and pistachios; let warm through for 5 minutes.
  7. Garnish with chopped parsley before serving.
