  • 2 medium Yukon Gold potatoes (peeled and diced)
  • 6 slices thick-cut bacon (cooked and chopped)
  • 4 green onions (chopped)
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup sharp cheddar cheese (shredded)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the bacon until crispy. Remove from heat and chop into bite-sized pieces.
  3. In the same skillet, sauté diced potatoes in the remaining bacon grease until golden brown and fork-tender (about 10-12 minutes).
