  • 1 cup canned pumpkin puree
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • 2 tsp pumpkin pie spice
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, baking powder, pumpkin pie spice, and salt.
  3. In another bowl, cream together unsalted butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg and pumpkin puree until smooth.
  5. Gradually combine the dry mixture with the wet ingredients until just mixed; do not overmix.
  6. Fold in chocolate chips and mini marshmallows.
  7. Scoop dough onto lined baking sheets about 2 inches apart.
  8. Bake for 10-12 minutes until edges are golden but centers are slightly underbaked.
  9. Let cool on sheets before transferring to wire racks.
