  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ⅓ cup granulated sugar (plus additional for fruit)
  • 16 oz cream cheese, softened
  • 2 large eggs
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • 1 cup strawberries, mashed (fresh or frozen)
  • 1 cup blueberries, mashed (fresh or frozen)
  • ¼ cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, and granulated sugar. Press into the bottom of the prepared dish.
  3. Beat cream cheese until smooth. Gradually add granulated sugar, then eggs one at a time until creamy.
  4. Fold in sour cream and vanilla until well combined.
  5. Mash strawberries and blueberries separately with powdered sugar. Drop spoonfuls onto cheesecake batter and swirl gently with a knife.
  6. Bake for 30-35 minutes until edges are set but center jiggles slightly. Cool completely before slicing.
