  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 4 large eggs (room temperature)
  • 1 cup dark rum
  • 1/2 cup chopped walnuts or pecans (optional)
  • For glaze: 1/2 cup granulated sugar + 1/4 cup dark rum

Instructions

  1. Preheat oven to 325°F (165°C) and grease a bundt pan.
  2. In a bowl, whisk flour, baking powder, and salt; set aside.
  3. In another bowl, cream softened butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each. Pour in dark rum.
  5. Gradually fold in dry ingredients until just combined.
  6. Pour batter into the prepared bundt pan.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. While baking, prepare the glaze by dissolving sugar in remaining rum over low heat.
  9. Cool cake in pan for 10 minutes before flipping onto a wire rack; brush with glaze while warm.
