  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 3 large eggs, room temperature
  • 2 tsp vanilla extract
  • 2 cups tart apples (like Granny Smith), diced
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ⅔ cup salted caramel sauce (store-bought or homemade)
  • Whipped cream (optional)

Instructions

  1. Preheat your oven to 325°F (160°C). In a bowl, mix graham cracker crumbs with melted butter until crumbly.
  2. Press the mixture firmly into the bottom of a springform pan and bake for 10 minutes until slightly golden. Allow it to cool.
  3. In a separate bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
  4. Stir in vanilla extract gently; then fold in diced apples, cinnamon, and nutmeg.
  5. Pour half of the cheesecake batter onto the cooled crust and drizzle half of the salted caramel sauce on top. Add remaining batter.
  6. Bake for 50-60 minutes until slightly jiggly in the center. Turn off the oven and crack the door open; let it cool inside for an hour before chilling in the fridge overnight.
