  • 2 lbs sweet potatoes, peeled and thinly sliced
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme (plus extra for garnish)
  • 1 cup sharp cheddar cheese, shredded
  • 2 tbsp butter (for greasing)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a medium baking dish with butter.
  2. In a bowl, whisk together heavy cream, minced garlic, salt, pepper, and thyme until combined.
  3. Layer half of the sweet potato slices in the baking dish. Pour half of the cream mixture over the layers, then sprinkle with half of the cheese.
  4. Repeat layering with remaining sweet potatoes, cream mixture, and top with the remaining cheese.
  5. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 20-25 minutes until golden brown.
