  • 3 large eggs (room temperature)
  • 2 cups self-raising flour
  • Zest of 1 lemon or orange

Instructions

  1. Preheat oven to 325°F (160°C). Grease a round cake tin or line it with parchment paper.
  2. In a large bowl, whisk together self-raising flour, cinnamon, nutmeg, and zest until evenly combined.
  3. In another bowl, cream the softened butter and brown sugar until light and fluffy (about 3-5 minutes).
  4. Gradually add eggs one at a time, mixing well after each addition to maintain a smooth batter.
  5. Gently fold in the dried mixed fruit and small pieces of almond paste using a spatula to keep the mixture airy.
  6. Pour the batter into the prepared tin and smooth the top. Bake for about 1 hour or until golden brown and firm to touch. Allow to cool before removing from the tin and decorating with almond paste.
