  • 2 medium eggplants (about 1.5 lbs total)
  • 1 cup marinara sauce
  • 8 oz fresh mozzarella cheese, sliced
  • ½ cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 3 tbsp olive oil
  • ¼ cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare the eggplant by slicing it into 1/4-inch rounds. Sprinkle with salt and let it sit for 30 minutes. Rinse and pat dry.
  2. In a shallow dish, mix panko breadcrumbs with grated Parmesan cheese. Dredge each eggplant slice in the mixture until well-coated.
  3. Heat olive oil in a large skillet over medium heat. Fry the breaded eggplant slices in batches for about 3-4 minutes per side until golden brown.
  4. Layer fried eggplant slices in the skillet with marinara sauce, then top with mozzarella slices and additional Parmesan.
  5. Cover and cook on low heat for 5-10 minutes until melted; optionally broil briefly for extra bubbly cheese.
