  • 2 cups fresh baby spinach
  • 1/2 cup sun-dried tomatoes (packed in oil), chopped
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the spaghetti in a large pot of salted boiling water until al dente (8-10 minutes). Reserve 1/2 cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic for about 1 minute until fragrant, then add spinach and cook until wilted.
  3. Stir in chopped sun-dried tomatoes and heavy cream. Simmer gently until the sauce thickens slightly.
  4. Add the drained spaghetti to the skillet, tossing to coat with the sauce. If needed, incorporate reserved pasta water for desired consistency.
  5. Mix in freshly grated Parmesan cheese and season with salt and pepper to taste.
  6. Serve topped with more cheese or fresh herbs if desired.
