  • 8 oz spaghetti
  • 2 cups fresh spinach
  • 1/2 cup oil-packed sun-dried tomatoes, chopped
  • 1 cup heavy cream (or half-and-half)
  • 3 cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook spaghetti in salted boiling water until al dente. Drain and reserve some pasta water.
  2. In a skillet over medium heat, heat olive oil and sauté minced garlic until fragrant.
  3. Add fresh spinach and sauté until wilted.
  4. Stir in chopped sun-dried tomatoes followed by heavy cream. Let simmer until thickened.
  5. Combine cooked spaghetti with the sauce, tossing well to coat.
  6. Gradually add reserved pasta water if needed for creaminess.
  7. Mix in grated Parmesan cheese and season with salt and pepper.
