  • 12 fresh cannelloni pasta tubes
  • 1 ½ cups ricotta cheese
  • 2 cups fresh spinach (chopped)
  • ½ cup grated Parmesan cheese (divided)
  • 3 cups marinara sauce
  • 2 garlic cloves (minced)
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a pan, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add chopped spinach and cook until wilted (about 3-4 minutes).
  3. In a bowl, mix sautéed spinach, ricotta cheese, and half of the grated Parmesan. Season with salt and pepper.
  4. Carefully fill each cannelloni tube with the spinach-ricotta mixture and place them upright in a baking dish.
  5. Pour marinara sauce generously over the filled cannelloni. Reserve some sauce for drizzling later.
  6. Cover with foil and bake for 25 minutes. Remove foil, sprinkle remaining Parmesan on top, and bake uncovered for another 15 minutes until golden brown.
  7. Let cool for 5 minutes before serving.
