- 12 fresh cannelloni pasta tubes
- 1 ½ cups ricotta cheese
- 2 cups fresh spinach (chopped)
- ½ cup grated Parmesan cheese (divided)
- 3 cups marinara sauce
- 2 garlic cloves (minced)
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a pan, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add chopped spinach and cook until wilted (about 3-4 minutes).
- In a bowl, mix sautéed spinach, ricotta cheese, and half of the grated Parmesan. Season with salt and pepper.
- Carefully fill each cannelloni tube with the spinach-ricotta mixture and place them upright in a baking dish.
- Pour marinara sauce generously over the filled cannelloni. Reserve some sauce for drizzling later.
- Cover with foil and bake for 25 minutes. Remove foil, sprinkle remaining Parmesan on top, and bake uncovered for another 15 minutes until golden brown.
- Let cool for 5 minutes before serving.
