  • 1 lb sirloin steak, cut into bite-sized pieces
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 medium red onion, sliced
  • 1 medium zucchini, sliced into thick rounds
  • 3 tbsp extra virgin olive oil
  • 2 tsp garlic powder
  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix olive oil, garlic powder, cumin, paprika, lemon juice, salt, and pepper. Add steak pieces and coat well. Marinate for at least 30 minutes.
  2. Chop bell peppers, zucchini, and red onion into similar-sized pieces.
  3. Alternate threading marinated steak and vegetables onto skewers.
  4. Heat grill to medium-high (400°F) or preheat oven to broil mode.
  5. Cook skewers on the grill or under the broiler for about 8-10 minutes until steak is charred and veggies are crisp-tender.
  6. Let skewers rest before removing ingredients. Serve over rice or quinoa with sauces like tzatziki or hummus.
