Description

Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 2 cups rhubarb stalks, chopped
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 2 tbsp lemon juice
  • 1/2 tsp ground cinnamon (optional)
  • 1/2 cup unsalted butter, chilled and cubed
  • 1 pre-made pie crust (or homemade)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, combine strawberries, rhubarb, sugar, flour, lemon juice, and cinnamon. Mix gently until coated.
  3. If making a homemade crust, blend flour and butter until crumbly. Add ice water gradually until dough forms; roll out after chilling.
  4. Place one crust in a pie dish; fill with fruit mixture. Cover with the second crust or create a lattice top; seal edges.
  5. Bake for 15 minutes at 425°F, then reduce temperature to 350°F (175°C) and bake for an additional 30–35 minutes until bubbly and golden.
  6. Cool slightly before slicing and serve warm or at room temperature.
