  • 4 cups sweet potatoes (peeled and chopped)
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter (melted)
  • 1/2 cup whole milk (or almond milk for dairy-free)
  • 1/2 cup chopped pecans
  • 1 tsp ground cinnamon
  • 1 cup mini marshmallows (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Boil sweet potatoes in water for about 15 minutes until fork-tender.
  2. Drain the sweet potatoes and return them to the pot. Add melted butter, brown sugar, milk, cinnamon, and a pinch of salt. Mash until smooth.
  3. Transfer the mixture to a greased baking dish. In a separate bowl, mix chopped pecans with remaining brown sugar and melted butter. Sprinkle over the sweet potato mixture.
  4. Bake for 25-30 minutes until golden brown on top. If using marshmallows, add them during the last 5 minutes of baking.
