Description

  • 1 sheet puff pastry (store-bought)
  • 2 cups mixed fresh mushrooms (cremini and shiitake), sliced
  • 1 medium shallot, finely chopped
  • 2 garlic cloves, minced
  • 4 oz cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1 tsp fresh thyme leaves (or 1/3 tsp dried thyme)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, add olive oil. Sauté the sliced mushrooms for about 7-10 minutes until they are golden brown.
  3. Add the shallots and garlic to the skillet; cook for another 2-3 minutes until fragrant.
  4. In a bowl, mix softened cream cheese with thyme, salt, and pepper until smooth.
  5. Roll out the puff pastry on parchment paper. Spread the cream cheese mixture evenly over it, then layer the sautéed mushrooms on top. Finish with grated Parmesan cheese.
  6. Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown.
  7. Allow to cool slightly before slicing into squares or wedges and serve warm or at room temperature.
