  • 9 lasagna noodles (no-boil or traditional)
  • 4 ripe tomatoes (chopped)
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1/4 cup fresh basil leaves (chopped)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat; sauté minced garlic until fragrant. Add chopped tomatoes, seasoning with salt and pepper. Cook until soft.
  3. In a mixing bowl, blend ricotta cheese, half of the mozzarella, Parmesan cheese, salt, pepper, and chopped basil until creamy.
  4. In a baking dish, layer some tomato sauce at the bottom followed by lasagna noodles, cheese mixture, and repeat until all ingredients are used. Top with remaining mozzarella.
  5. Cover with foil and bake for 25 minutes; uncover and bake an additional 15-20 minutes until golden brown.
  6. Allow lasagna to rest for 10 minutes before slicing.
