Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix flour, sugar, and salt. Cut in cold butter until crumbly.
  2. Press the mixture into the bottom and sides of a tart pan. Bake for 15-20 minutes until lightly golden brown. Let cool completely.
  3. In a saucepan over medium heat, whisk together mango puree, sugar, eggs, lemon juice, and salt for about 10 minutes until thickened.
  4. Strain the curd through a fine mesh sieve into another bowl for smoothness. Cool slightly before pouring into the cooled crust.
  5. Refrigerate for at least two hours or until set. Top with whipped cream if desired before serving.
