  • 2 large eggs

  • 1 tsp vanilla extract
  • 1 cup powdered sugar (for frosting)
  • 1 cup sweetened coconut flakes (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt.
  3. In another bowl, cream the softened butter until fluffy. Add eggs one at a time, mixing well after each addition. Stir in milk and vanilla extract.
  4. Gradually combine the dry ingredients with the wet mixture until fully blended, being careful not to over-mix.
  5. Divide the batter evenly among cupcake liners in a muffin tray, filling each about two-thirds full.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Allow to cool completely on wire racks.
  7. Frost with vanilla icing and sprinkle with coconut flakes before serving.
