  • 2 stalks fresh lemongrass, minced

  • 1-inch piece ginger root, grated
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp fish sauce
  • 1 tbsp light brown sugar
  • Juice of 1 lime
  • 2 tbsp vegetable oil (e.g., canola)
  • Fresh cilantro (for garnish)

Instructions

  1. In a large bowl, whisk together minced lemongrass, garlic, ginger, soy sauce, fish sauce, brown sugar, and lime juice until well blended.
  2. Slice chicken into bite-sized pieces or leave whole; add to the marinade and let soak for at least 30 minutes.
