- 1 cup granulated sugar
- 2 cups water
- 1 cup fresh basil leaves
- Zest of 2 organic lemons
Instructions
- In a saucepan, combine 2 cups water and 1 cup sugar over medium heat until the sugar dissolves completely. Add 1 cup fresh basil leaves and simmer gently for about five minutes.
- Squeeze juice from fresh lemons to yield about 1 cup, straining out any seeds.
- Remove basil leaves from the syrup and mix the basil-infused syrup with lemon juice in a large bowl until well combined.
- Fold in the zest of 2 organic lemons.
- Pour the mixture into an ice cream maker and churn according to manufacturer's instructions until thickened. If you don’t have an ice cream maker, pour it into a shallow dish and freeze, stirring every 30 minutes until firm but scoopable.
- Serve in bowls or cones, garnished with extra basil leaves or lemon slices.
