- 1 cup tri-color quinoa
- 2 cups water or vegetable broth
- 1 medium cucumber, diced
- 1 cup cherry tomatoes, halved
- ½ small red onion, finely diced
- 1 bell pepper (red or yellow), chopped
- ½ cup feta cheese, crumbled
- ¼ cup fresh parsley, chopped
- ¼ cup fresh mint, chopped
- 3 tbsp extra virgin olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water until the water runs clear. In a saucepan, combine rinsed quinoa and water or broth. Bring to a boil, cover, reduce heat to low and simmer for 15 minutes.
- While quinoa cooks, dice cucumber, halve cherry tomatoes, finely chop red onion and bell pepper.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Fluff cooked quinoa with a fork in a large bowl; add chopped vegetables, feta cheese, parsley, and mint.
- Drizzle dressing over salad and toss gently until combined. Chill in the fridge for at least 30 minutes before serving.
