- 1 cup fresh strawberries, hulled and sliced
- 1 cup fresh blueberries
- 1 cup full-fat coconut milk
- 2 tbsp honey or maple syrup (adjust to taste)
- 1 tbsp freshly squeezed lemon juice
Instructions
- Rinse strawberries and blueberries under cold water. Slice strawberries for easier blending.
- Blend sliced strawberries with honey and lemon juice until smooth. Pour into popsicle molds, filling them one-third full.
- Add coconut milk to each mold until filled halfway.
- Blend blueberries with honey and lemon juice until smooth. Pour this mixture on top of the coconut layer in each mold.
- Insert sticks and freeze for at least 4 hours or overnight. To remove, run warm water over the outside of the molds.
