Description

Red White and Blue Popsicles are the perfect summer treat, combining creamy coconut milk with fresh strawberries and blueberries for a refreshing, patriotic dessert. Ingredients

  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 cup full-fat coconut milk
  • 2 tbsp honey or maple syrup (adjust to taste)
  • 1 tbsp freshly squeezed lemon juice

Instructions

  1. Rinse strawberries and blueberries under cold water. Slice strawberries for easier blending.
  2. Blend sliced strawberries with honey and lemon juice until smooth. Pour into popsicle molds, filling them one-third full.
  3. Add coconut milk to each mold until filled halfway.
  4. Blend blueberries with honey and lemon juice until smooth. Pour this mixture on top of the coconut layer in each mold.
  5. Insert sticks and freeze for at least 4 hours or overnight. To remove, run warm water over the outside of the molds.
