- 1 lb large shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 cup citrus fruits (oranges and grapefruits), juiced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 3 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Rinse shrimp under cold water and pat dry.
- Heat olive oil in a skillet over medium heat. Cook shrimp until pink and opaque, about 3 minutes per side.
- While the shrimp cooks, dice avocados and slice red onions.
- In a bowl, whisk together citrus juice, remaining olive oil, salt, and pepper for the dressing.
- In a large bowl, combine cooked shrimp, avocados, red onions, and cilantro. Drizzle dressing over the mixture and toss gently.
- Chill in the fridge for 15 minutes before serving.
